5 Key Metrics to Increase Restaurant Sales

5 Key Metrics to Increase Restaurant Sales
5 Key Metrics to Increase Restaurant Sales

A restaurant’s success is not measured by revenue alone. A busy restaurant may generate significant sales but still struggle to achieve the expected profit. The key is to understand how revenue is generated, where costs occur, and which operational improvements can produce better results.

1. Daily Revenue
Daily revenue shows how much sales income your restaurant generates. Compare actual sales with targets, analyze peak hours, and identify differences between weekdays and weekends.

2. Average Check
Formula: Total Sales ÷ Number of Guests. If your restaurant generates AZN 3,000 in sales from 150 guests, the average check is AZN 20. Improve this metric through menu combinations, beverage recommendations, dessert sales, and staff training.

3. Food Cost
Formula: Cost of Ingredients Used ÷ Food Sales × 100. If food sales total AZN 10,000 and ingredient costs are AZN 3,000, food cost is 30%. Use standardized recipes, portion control, inventory management, and waste reduction.

4. Labor Cost
Formula: Labor Costs ÷ Sales Revenue × 100. If monthly sales are AZN 90,000 and labor costs are AZN 18,000, the labor cost ratio is 20%. Schedule staff efficiently without compromising service quality.

5. Product Waste and Operational Losses
Monitor incorrect orders, excessive portions, expired ingredients, storage practices, and inventory discrepancies. Record waste and conduct regular stock counts.

Building a Daily Restaurant Performance Report
Monitor sales, guest count, average check, discounts, voids, product waste, and staff hours. Review figures daily, analyze weekly, and compare with monthly financial results.

Conclusion
Better cost control, staff scheduling, consistent portions, and data-driven decisions can improve restaurant profitability.
